Tofu Spring Rolls

1 clove Garlic
1/2 cup Peanut Butter
2 Tbsp Reduced Sodium Soy Sauce
1 tsp Brown Sugar
1/4 tsp Crushed Red Pepper Flakes
1 bag Spring Roll Wrappers
1 lb Tofu
3/4 cup Alfalfa Sprouts
3/4 cup Carrot
1/4 Red Cabbage
1 bunch Fresh Mint
to taste Lettuce

STEP 1
Peel the Ginger.
STEP 2
Peanut Sauce: Add ginger, Garlic, Peanut Butter, Reduced Sodium Soy Sauce, Lime Juice, Brown Sugar and Crushed Red Pepper Flakes for the peanut sauce to the food processor. Add 1/3 cup water and run until smooth.
STEP 3
Tofu: Boil the Tofu in water for 5-10 minutes. Drain well. Cut into 1/2 inch long strips.
STEP 4
Julienne and slice the Carrot on a mandolin.
STEP 5
Slice the Cucumber on a mandolin.
STEP 6
Slice the Red Cabbage on a mandolin.
STEP 7
Spring Rolls: Pour water into a shallow dish and dip the Spring Roll Wrappers for 2-3 seconds per side. Transfer to a damp cutting board. Add tofu, Alfalfa Sprouts, carrots, cucumber, red cabbage, Fresh Cilantro, Fresh Mint and Lettuce to your liking. They don't all need to be the same. Gently roll like a burrito. Cover with a damp towel to keep fresh.​ Enjoy!
