Vegan AND Budget Friendly?

For some reason, certain people (ahem, meat eaters) seem to think that eating a plant-based diet is expensive. Sure, sometimes certain vegan places like to hike up the prices of a dish just by saying it's "organic and vegan". In reality, eating vegan should not be expensive. Forget that $4 matcha latte or $15 grain bowl. These dinners are all budget friendly, last well in the fridge and will fuel your body. All hail home cooking!
